Gazpach-Oh Damn That's Good recipe

This refreshing cold soup makes the perfect shareable appetizer to start a culinary adventure. It looks and tastes like you had to make a reservation for it!

Ingredients

2 pounds
Ripe Tomatoes
1 small
Anaheim Pepper
1 small
Red Onion
1 clove
Garlic
2 tablespoon
Sherry Vinegar
0.5 cup
Extra Virgin Olive Oil
2 teaspoon
Salt
1 cup
Stale Bread
0.25 cup
Creme Fraiche

Instructions

1Step 1

Combine the bread and sherry vinegar in a bowl and toss. Set aside for 10 minutes.

Stale bread about 2-3 days old is ideal. I love using leftover Big Bubbly Focaccia for this.
2Step 2

Large dice tomatoes, onions, pepper and garlic.

Only a small clove of garlic is needed; a large clove can overpower the rest of the flavors.
Reserve a small portion of tomato flesh to finely chop for finishing
If the tomatoes are overly watery, soak up a little moisture with a paper towel.
3Step 3

Blend vegetables, salt and bread on high speed until smooth, about 2 minutes.

4Step 4

With the blender running, add the olive oil slowly, until the mixture starts to emulsify and change color

It should start to turn orange as the emulsification takes hold.

Strain through a fine sieve to remove solids

This step is optional. If you want a more rustic dish, leave the solids in!

Transfer to a large container (like a glass pitcher) and refrigerate for at least 6 hours.

If you can wait overnight, it's worth it! The flavors develop nicely as it sits in the fridge.
7Step 7

Season the creme fraiche with salt and pepper, and dilute with a little water until it just runs off a spoon.

8Step 8

Once chilled, pour 6-8 ounces of gazpacho into a bowl to share from.

Top with a spoonful of the creme fraiche and olive oil, drizzling around the bowl.

10Step 10

Small chop the remaining tomato flesh (discarding the seeds and liquid parts). Carefully spoon a small pile of chopped tomatoes into the center of the bowl.

Send this dish over the top by topping it with a handful of Big Bubbly Focaccia croutons!
