Late Harvest Agrodolce recipe

Ingredients

6 medium
Medium Green Bell Peppers, thinly sliced
0.5 pound
Sungold Tomatoes
1 large
Carrot, halved and thinly sliced
1.5 tbsp
White wine vinegar
1 tbsp
Honey
2 tsp
Dark Brown Sugar

Instructions

1Step 1

Heat a skillet on medium heat with a drizzle of olive oil. Add the carrots and cook 3-5 minutes until they start to caramelize.

We are using medium heat to caramelize the carrots for depth of flavor.
2Step 2

Combine the vinegar, honey and brown sugar in a bowl and set aside.

3Step 3

Increase the head to medium high, and add the sliced peppers. Cook 3-5 minutes until the peppers start to turn translucent on the edges.

4Step 4

Reduce the heat and add the halved tomatoes, and cook for 3-5 minutes until the tomates start to break down. Season with salt and pepper

5Step 5

As soon as the tomatoes start to break down, add the sauce. Cook, stirring continuously, until the sace has thickened.
