Pork Tenderloin Tacos

Grilled marinated pork tenderloin served in warm corn tortillas with caramelized onions and a squeeze of fresh lime. This dish is delicious, easy, and perfect for camping.

Trim the tenderloin to remove the long strips of silver skin.
Season on all sides with salt and pepper. Set aside to let the salt work while you slice the onion.
Thinly slice the onion.
Heat a skillet on medium heat with a drizzle of olive oil, and add the onions. Season with salt.
After the onions have been cooking about 7 minutes, heat a separate skillet on medium high with a drizzle of olive oil.
Sear the tenderloin for 30 seconds to a minute on each side, rotating 90 degrees each time. Continue this cycle until an instant read thermometer reads 140 °F
Wipe out the pan/Wipe off the cooktop and spread a thin layer of oil. Place the tortillas in a single layer, and let cook for 1-2 minutes. Flip and cook the other side.
Once rested, slice the tenderloin on a bias about 1/8 of an inch thick
Serve tortillas on the plate with a few slices of pork and some caramelized onions with lime wedges on the side.
