Pork Tenderloin Tacos recipe

Grilled marinated pork tenderloin served in warm corn tortillas with caramelized onions and a squeeze of fresh lime. This dish is delicious, easy, and perfect for camping.

Ingredients

16 oz
Pork Tenderloin
10 ea
Corn Tortillas
1 medium
Yellow Onion
3 small
Limes, quartered.

Instructions

1Step 1

Trim the tenderloin to remove the long strips of silver skin.

A sharp, thin knife makes this much easier.
Poke the tip of the knife just under the layer of silver skin, angle the blade so it's parallel with the tenderloin, and push along the muscle grain.

Season on all sides with salt and pepper. Set aside to let the salt work while you slice the onion.

Thinly slice the onion.

Heat a skillet on medium heat with a drizzle of olive oil, and add the onions. Season with salt.

Have patience! The key to caramelized onions is "low and slow".
The onions will start to turn a golden color, but should not exhibit the telltale sear of sautéing.

After the onions have been cooking about 7 minutes, heat a separate skillet on medium high with a drizzle of olive oil.

You can also use a separate section of your flattop on higher heat.

Sear the tenderloin for 30 seconds to a minute on each side, rotating 90 degrees each time. Continue this cycle until an instant read thermometer reads 140 °F

We want a good sear on the outside of the tenderloin to give texture and flavor.
Pork should be cooked to 145 °F. We are pulling it off just shy of that under high heat, so that the meat comes to temperature while it rests.
7Step 7

Wipe out the pan/Wipe off the cooktop and spread a thin layer of oil. Place the tortillas in a single layer, and let cook for 1-2 minutes. Flip and cook the other side.

We want to not only get the tortillas warm, but add a little color to them.

Once rested, slice the tenderloin on a bias about 1/8 of an inch thick

Serve tortillas on the plate with a few slices of pork and some caramelized onions with lime wedges on the side.
