Ingredients

140 grams
All Purpose flour
2 large
Eggs
1 teaspoon
Extra Virgin Olive Oil
1 teaspoon
Salt

Instructions

1Step 1

Combine ingredients in a food processor, and pulse until a dough ball forms, about 30 seconds.

Time can vary based on your food processor.
2Step 2

Remove the dough onto a lightly floured surface and knead for 5 minutes.

Add a few drops of water at a time if the dough seems dry.
Dust with more flour if the dough seems wet.
3Step 3

Wrap the dough in plastic wrap and set aside for 30 minutes.

That dough needs to think about what it's done. Also resting allows the gluten to chill out and relax.
4Step 4

Roll out the dough into your favorite pasta shape and get cooking!

The dough will keep in the fridge for 2-3 days

Bring a small pot of water to a boil, and add the pasta for 4-5 minutes (al-dente)

Taste a piece of your prepared pasta dough, and adust the amount of salt you add to the pasta water
