Sticky Pistachio Shrimp recipe

Succulent shrimp glazed in a sweet and savory pistachio coating, pan-seared to perfection. The nutty crunch paired with tender seafood creates an unforgettable flavor combination.

Ingredients

16 ounces
Large Shrimp (24-30), Peeled and Deveined
1 cup
Shelled Pistachios
2 tbsp
Gochujang
2 tbsp
Honey
2 tsp
Soy Sauce
1 tsp
Rice Vinegar
1 tsp
Olive Oil

Instructions

1Step 1

Pat the shrimp dry with paper towels. Season with salt and pepper, and toss with the olive oil to coat.

Don't season with salt and pepper until right before you are ready to cook.
2Step 2

Heat a drizzle of Olive Oil in a skillet on Medium-High heat. Add the shrimp in a single layer and cook without stirring 3-5 minutes.

Wait until your pan is hot enough that a drop of water sizzles and dances, evaporating in a couple of seconds.
The shrimp will be more than halfway cooked when this step is done! If you are using smaller or larger shrimp, adjust the time accordingly.

Meanwhile, combine the Soy Sauce, Honey, Vinegar and Gochujang.

Add the sauce to the partially cooked shrimp and toss to coat. Cook 1-2 minutes until the sauce is thickened and the shrimp are cooked through.

A rubber spatula is great for getting all that delicious sauce out of the pan!

Place half of the pistachios on a plate, place the shrimp on top, and top with the remaining pistachios.

Garnish with thinly sliced scallions for more color!
